We all need our sweet treats but this is a sweet treat with hardly any sugar in it, yet is still satisfying and will help when cravings rear their ugly head. Eat as is or toasted with some nut butter. A great addition to a lunch box or a perfect fuel post-training session or gym workout.
300g pecans
½ tsp cream of tartar
1 tsp cinnamon
4 eggs
1 large ripe banana
2 tbsp olive oil
1 tbsp Maple syrup
1. Turn the oven on to 180C, gas mark 4
2. Place the pecans into a blender or grinder and process into a flour like consistency
3. Put in a bowl and add the other dry ingredients
4. Place the eggs, oil, maple syrup and banana in a blender and process until smooth
5. Pour into the dry ingredients and mix thoroughly
6. Spoon into a lined loaf tin
7. Bake at 180°C for 40-45 minutes or until firm to touch
8. Allow to cool for 5 minutes before turning out
